The adjective that accompanies us, ITALIANA, refers to the selection of dishes offered: local cuisine recipes with an eye for the Tuscan and Florentine tradition.

We offer exclusively top quality Italian wines from all over the peninsula, starting with the prestigious local productions such as Chianti Classico, Brunello di Montalcino and finally with Amarone, Barolo and many others … Only the bottles that received the best judgment from the experts Wine Spectator and OperaWine enter by right into our cellar.

Inside our restaurant you can breathe art and culture, with grotesque frescoes and references to the main works of the Florentine Renaissance. The style of the restaurant is completed by the elegant classic furniture and a sumptuous teardrop chandelier made by skilled Florentine artisans.

THE BEST ITALIAN BOTTLES

Even when we fill the glasses, we remain faithful to the value of Italianness. Our cellar is home to only Italian wines near and far. We favor local DOCG productions, such as Chianti Rosso, Brunello di Montalcino, Vernaccia di San Gimignano, Bolgheri reds, the pride of the region, but we also offer a wide variety of bottles from all over the peninsula, from Piedmont to Sicily, covering all the cellars from our peninsula.

The only parameter of choice is the highest quality.

In this regard we do not rely only on the knowledge of our sommeliers, but we operate a strict selection based on the main international reference lists issued by Wine Spectator magazine, the highest authority on enology, during the annual OperaWine event in collaboration with Vinitaly. Only Italian productions that have passed the expert test and received the best rating in the top 100 enter our cellar.

THE ITALIAN TABLE

Italian cuisine is a great celebration of colors and flavors. We have decided to focus on three Specialties, cheeses, game and truffles to ensure that we express the best qualities and taste of these raw materials.

For each selection we create with passion the best recipes inspired by national tradition, paying special attention to the typical dishes of the Tuscan and Florentine territory. We follow the principle of seasonality in order to capture the best that nature has to offer at any time of the year.

The courses are conceived as unique works of art. We offer them in a la carte menu or tasting menu to transport our guests on a journey to discover fine Mediterranean foods.

Intriguing aromas and notes of flavor that awaken hidden emotions, served in what is not a simple meal, but an experience. A good glass of wine, of equal refinement, will accompany the dishes to sharpen the taste sip after sip.

PRELIBATO ITALIAN INGREDIENTS

Let’s explore Italy in the continuous search for new gastronomic products of excellence to be included in the dishes. We carefully select the best quality raw materials, exclusively Italian, to celebrate the rich local culinary tradition. We find them from trusted producers in their places of origin so as to guarantee maximum freshness and authenticity.

Great attention is paid to local Florentine and Tuscan specialties, but not only. From north to south, we choose the flagship of each region to create authentic dishes.

From the deer of Trentino-Alto Adige to the black truffle of Norcia, the white of Alba, passing to the Burrata from Puglia, the menu includes only the best of Italian meats, cheeses and truffles.

BEHIND THE COOKERS

Our ambition is not limited to choosing the best ingredients.

A much more difficult challenge is the preparation of dishes that must exalt the goodness and quality of the selected raw materials in a well defined way. This is the motivation that drives the staff of Degusteria Italiana to give its best from the research of the best product, to the processing and design of the cooked dish.

A daily responsibility that starts from the owner Arianna Di Filippo, engaged in the careful selection of raw materials together with her partner Alessio, and takes shape with the chef Filippo Ristori, a young Florentine talent with a rich experience in international starred restaurants, who signs the dishes served on the table.

You can admire their mastery at work inside the restaurant thanks to the open kitchen, a direct window on the culinary passion that enhances each course.
